We extract the honey from the honeycomb without any processing, in its purest form, unheated. That is why our honey is not heated at any stage of its production. We do this for reasons of conscience and philosophy.
Raw honey retains its nutrients that are lost to some extent in ordinary honey when heated. Second and very important is the pollen it contains. Raw honey contains a wide variety of nutrients. It has about 31 different minerals, 22 amino acids and a wide range of vitamins and enzymes. However, nutrients are only present in trace elements.
Even more impressive for honey is that it contains about 30 types of bioactive plant compounds. Which are called polyphenols and act as antioxidants.
Basically it has not been heated and filtered and this makes it superior in quality to ordinary honey, and thus justifies the difference we find in its purchase price.
