The Lentinus Edodes, as is the scientific name of the shitake mushrooms, apart from protein and minerals, provides many vitamins (B12, B2 found almost exclusively in animal foods). The active substances fortify the immune system, fight fatigue, reduce total cholesterol levels and have strong antiviral activity. Promotes the metabolism of cholesterol in the liver and reduces dramatically the level of cholesterol in the blood. Daily for 1 week 9 gr. dried shitake reduce the overall level of cholesterol 7-15%. Garlic and ginger also aid in reducing "bad" cholesterol levels. Finally fiber intake through vegetables also helps in reducing "bad" cholesterol.
